My Irish Soda
Bread Recipe
I always make these in batches of three,
not on account of any Celtic
superstition,
but because one quart of buttermilk plus a splash of regular
milk will make three soda breads.
Ingredients: (for one soda bread)
4 cups all-purpose flour
1 tsp. salt
¼ cup granulated sugar
1 tsp. baking powder
2 tbls. caraway seed
6 tsps. of unsalted butter or margarine (about ¾
of a stick) cut into small
pieces (about ¼" cube)
1 cup raisins
1 1/2 cups of buttermilk
1 egg
1 tsp of baking soda
1 egg white
Preheat oven to 375º
Pre-grease
with butter

In a small bowl

mix egg, buttermilk,
and baking soda
In
large
mixing bowl
-
combine
flour,
salt, sugar, baking powder, caraway seed,
raisins
and butter
Empty liquids from small bowl
into
dry
mixed
ingredients
Mix by hand until firm
Turn dough on floured board, knead lightly, shape into a ball
and press
down slightly
into greased casserole.
Make a cross about ¼ inch deep on the top,
as though marking the ball into quarters,
brush with egg white.
Bake for about an hour – (we have a hot oven so I usually
bake for about 50 minutes.) Let cool – serve warm with butter or marmalade
and enjoy with a good cup of tea.
